Tajarin, typical of the Langhe, are a type of very long fresh pasta similar to tagliatelle, very thin and about 5 millimeters wide, prepared with abundant egg yolks in the dough, which give it its typical deep yellow color. Traditionally they are served with meat sauces and with mushrooms and truffles, ingredients of which this territory is rich and for which it is famous all over the world.
Ravioli del plin are also a very common first course and, just like tajarin, have PAT recognition: Prodotti Agroalimentari Tradizionali del Piemonte (Traditional Food Products of Piedmont).
