For those who want to satisfy the palate to the sound of truffles, we have two formidable first courses on our menu. Strictly handmade as tradition teaches: Tajarin homemade with porcini mushrooms and truffle and Raviolini del Plin with ricotta cheese and black truffle in butter and sage.
Tajarin, typical of the Langhe, are a type of very long fresh pasta similar to tagliatelle, very thin and about 5 millimeters wide, prepared with abundant egg yolks in the dough, which give it its typical deep yellow color. Traditionally they are served with meat sauces and with mushrooms and truffles, ingredients of which this territory is rich and for which it is famous all over the world.
Ravioli del plin are also a very common first course and, just like tajarin, have PAT recognition: Prodotti Agroalimentari Tradizionali del Piemonte (Traditional Food Products of Piedmont). Ravioli del plin owes its name to the “pinch” used to close them during the preparation phase. They are cooked in a wide variety of ways: with roast or meat sauce Piedmontese style, with butter and sage, in meat broth, in wine and in many other variations. We present them with a simple condiment, capable of bringing out all the flavor and aroma of the truffle, the undisputed prince of the dish.
